12 Days of Christmas Crafting - Day 5 Christmas Salad

Meaghan's Christmas Salad



Amongst all the holiday foods, sweet pastries, rich chocolates, savoury gravy and supple turkey, creamy fluffed whipped potatoes, powdery short bread cookies, gooey, nutty fruit cakes, sticky cinnamon buns, honey glazed carrots--OK, I gotta stop thinking about food! Do you think about food as much as I do? I totally start dreaming about Christmas dinner months in advance!



Which is where my Christmas salad comes in very handy. This is a scrumptious and healthy (or at least it's healthy compared to the list of foods above that we'll be eating this holiday!) salad you can enjoy especially at Christmas, and you'll see why when you see the delicious colours and ingredients!


You will need:
1 package of baby spinach
2 cups of pecans
1 pomegranate
1 cup of raspberries
1/2 cup of goat cheese
low fat poppy seed dressing Step 1. Candy some pecans. I start off with a blob of butter and a smush of brown sugar, then I add pecans and stir until the pecans are coated in caramelized candy. If you want to be healthier, leave out the butter and sugar. You can just toast them if you want.


Step 2. Get to work on your pomegranate! OK, here's a few tips for the pomegranate virgins out there. WEAR AN APRON! These suckers are juicy and that juice travels and stains, so suit up.

Make a little slice in the pomegranate. It's full of the most beautiful little ruby like seeds.
Then, and this is somewhat uncomfortable and messy, try to split the whole fruit roughly in half. It's messy and you'll be glad you put your apron on!
Than carefully pull the seeds off and into a separate bowl. Try not to eat them, but I don't blame you if you have a snack! Pomegranates are so high in anti oxidants and so delicious!
Step 3. Toss your beautiful red raspberries in that salad bowl. Aren't they such a striking red hue?
Throw your bright green baby spinach in there, which is high in iron, fiver and has all sorts of other nutritious properties.

Step 4. Add your gorgeous, bejeweled pomegranate seeds. don't you just love these colours!
Step 5. Add your crumbled white goat cheese. This is a really sweet salad and I find the slight bite and creamy texture of the goat cheese cuts beautifully through the other flavours.

Step 6. Sprinkle your candied or toasted pecans on top of everything. Oh, ti's gonna be good people, it's gonna be GOOD!!!!

Step 7. Just before serving, drizzle a little bit of this fantastic salad dressing and toss your gorgeous ingredients together and VOILA!


Healthy, colourful, seasonal, and above all DELISCIOUS!!!! I like to try to fill up at least half of my plate with this healthy salad and make sure I'm getting delicious raw and healthy food, along with all the other treats of the season.

  1. An easy way to get the pomegranate seeds out with less mess is to quarter it and then in a bowl full of water you seperate the seeds from the pulp. The pulp will float to the top so it's easy to skim away and then you don't fight with the mess nearly as much. Works like a charm!
