OK, so Christmas just wouldn't be Christmas without shortbread cookies....those melt in your mouth bites of buttery goodness, OH MY! My mouth is watering just thinking about them! I only make these at Christmas so they are very special! This recipe has been in my (Monica's) family for years and I plan to pass it down to my own posterity. In the meantime, I will share it with you all!
Whipped Shortbread Cookies
1 pound of REAL butter
1 1/3 Cups Icing Sugar
3 3/4 Cups Flour
1 Tsp Salt
1 Tsp Vanilla
First you start with one pound of butter and the icing sugar. You whip it up with the mixer until it is soft and smooth. Is there any need to mention that REAL butter is a must...don't cheat your self here!
While the butter is whipping you can cut up some maraschino cherries to put on top to add some Christmas colour.
Once you feel that the butter has been whipped you'll add the remainder of the other ingredients and whip it again really well.

This recipe is a whipped shortbread so it is too soft to roll out and use cookie cutters with. You can either shape them in a ball and use cookie stamps or you can use this fancy Wilton Cookie Press and have a blast making different shapes! We sure did!
We decided to make a variety of Christmas shapes such as trees, wreaths and ornaments. It was So much fun!
This recipe yielded 146 shortbread cookies! Yes you read that right, 146! That's is 12 dozen plus 2! We were quite pleased with our evening's work, of course we had to sample a few...quality control is a must when you plan on giving these away. The rest have been safely tucked away for Christmas sharing. Can't wait, don't they look fabulous!
